It has been learned that Matsuya will add the ‘Hot Water-Seared and Soy-Marinated Tuna Bowl’ (880 yen) to its store-limited menu. It launches at 10:00 a.m. on Tuesday, July 21, alongside the ‘Hot Water-Seared and Soy-Marinated Tuna and Salmon Roe Bowl’ (1,280 yen), topped with salmon roe. The rollout covers 70 stores across 8 prefectures including Tokyo and Osaka, marking the first time a tuna-centered bowl has appeared in Matsuya’s store-limited lineup.

Tuna Prepared ‘Hot Water-Seared’ Style, Salmon Roe Bowl Priced at 1,280 Yen

The promotional image features a large headline reading “This umami, hot-water-seared style,” accompanied by the explanation, “Quickly blanched in hot water, then marinated in soy sauce-based sauce to seal in the umami.” “Hot water-searing” (yushimo) refers to a preparation technique in which only the surface of the fish is briefly dipped in hot water to lightly cook it, creating a marbled appearance. The image shows a sliced block of tuna (saku) with a faintly white surface while the center remains raw and red. A speech-bubble graphic reading “Fight summer fatigue with tuna!” is also included, signaling a pitch aimed at summer stamina demand.

There are two products. The ‘Hot Water-Seared and Soy-Marinated Tuna Bowl,’ with marinated tuna and green onion served over rice, costs 880 yen, while the ‘Hot Water-Seared and Soy-Marinated Tuna and Salmon Roe Bowl,’ which adds salmon roe on top, costs 1,280 yen. First Time Tuna Takes Center Stage at Matsuya, First Raw Fish Store-Limited Item Since March’s Poke Bowl

This is the first time a tuna-centered bowl has appeared across either Matsuya’s regular menu or its store-limited menu. Matsuya’s store-limited items have mostly centered on beef, pork, and chicken, with bowls topped with raw fish being rare. The most recent precedent is the ‘Poke Bowl,’ added at 65 stores on March 24, which featured diced tuna and salmon among other toppings. However, the Poke Bowl was pulled from listings just six days later, on March 30, alongside four other items, an episode in which a raw-fish store-limited item disappeared in short order.

The store-limited slot now filled by this tuna bowl also follows March’s ‘Soy Milk Pudding’ and May’s ‘Hiyajiru.’ From a dessert to a summer regional dish to a tuna bowl, the products rotating through this slot have grown increasingly varied with each cycle, suggesting it functions as a testing ground for seasonal highlights.

The four Kanto prefectures of Tokyo, Saitama, Tochigi, and Gunma account for 53 stores alone, or 75.7% of the total, followed by Osaka Prefecture with 10. All three participating stores in Nagano and Tochigi are Matsuya locations co-located with Matsunoya, while Gunma Prefecture is limited to just one store, the Ota Iizukamachi Store. Outside the core areas, the rollout narrows considerably. Overall, given the current scale of Matsuya’s store network, this remains a narrow, limited-area rollout covering only a small fraction of locations.
