At 7:00 a.m. on August 8, 2026, Matsuya’s official X account (@matsuya_foods) revealed that the tofu served at Matsuya is made with Hokkaido-grown soybeans (excluding Okinawa). The post noted that this same tofu is also used as an ingredient in the nationwide “Hiyajiru,” and went on to suggest the side dish “Chilled Tofu with Ginger and Green Onion” and the Morning Meal’s Choice of Side Dish as ways to enjoy the tofu on its own.

A Shift in Angle: From “Hiyajiru” to the Tofu Ingredient Itself

Matsuya’s official X account has spent the past several days posting about “Hiyajiru.” On July 31, 2026, it announced the August 4 launch; on the night of the release, it reported “It’s finally here”; and on August 6, 2026, it mentioned “Hiyajiru” again alongside a lineup featuring “Sushimatsu” and “Sharin.” Today’s post is the latest in that series, shifting the focus from “Hiyajiru” itself to the tofu that goes into it.

The post goes into detail on the tofu’s ingredients, explicitly stating it is “made with Hokkaido-grown soybeans,” with a note adding “excluding Okinawa.” After touching on the ingredient’s origin, it steers readers toward existing standard menu items as a way to enjoy the cold tofu on its own.

The Featured “Hiyajiru”: A New Face Launched on August 4

The “Hiyajiru” the post describes as “currently on sale” is a menu item that only just launched nationwide at 10:00 a.m. on August 4, 2026. Known as a local dish from Miyazaki, Hiyajiru is offered at Matsuya on its own for 390 yen, as well as in the “Hiyajiru Vegetable Set” for 730 yen and the “Hiyajiru (Choice of Side)” for 270 yen.

Among these, the Choice of Side version had its listed price on the official website lowered by 40 yen, from 310 yen to 270 yen, on August 5, 2026, the day after launch — meaning the displayed price shifted just after release. With this latest post shining a light on the tofu, the ingredient inside Hiyajiru itself is now drawing renewed attention.

Putting Tofu Center Stage: “Chilled Tofu with Ginger and Green Onion” and the Morning Meal’s Choice of Side Dish

The post named the side dish “Chilled Tofu with Ginger and Green Onion” (140 yen) as an option for enjoying the taste of tofu on its own. It is also one of the choices in the Morning Meal’s Choice of Side Dish, presented as a standard menu item that can be chosen either as part of breakfast or as an extra dish.

The image accompanying the post shows a plate of white, square tofu served in a beige dish. A generous layer of finely chopped scallion is piled on top, scattered with roasted sesame seeds. Behind the tofu sits a yellow condiment that appears to be mustard, making for the simple presentation typical of chilled tofu. Rather than being prepared as an ingredient the way it is in “Hiyajiru,” this is a way of eating that builds flavor from just the tofu and condiments alone.

The post closes with “Perfect for breakfast, or as an extra dish,” bridging interest from the buzzworthy new “Hiyajiru” menu item to the tofu that makes it up, and on to the standard “Chilled Tofu with Ginger and Green Onion” and the Morning Meal’s side dish, where tofu itself takes center stage.

Editor's Note

From talk of Hiyajiru to, of all things, the tofu itself. Hearing it's made with Hokkaido-grown soybeans makes me want to savor even my usual Chilled Tofu with Ginger and Green Onion a little more.
