A Bowl of Seared Rib Finger, a Rare Cut

According to the description on the image, rib finger — the Japanese name for the cut is nakaochi kalbi — is a rare cut of beef taken from between the ribs, known as “rib finger.” It’s characterized by rich umami packed with compounds released from the bone, along with a juicy texture, and searing it fragrantly is said to bring out even more of that umami. Launch Time Overlaps With Nationwide Free Service Voucher Campaign
Matsuya is nationally distributing a free service voucher that lets customers collect three of them for a serving of Small Serving Boneless Short Rib, running from 10:00 AM on August 11, 2026, through 10:00 AM on August 25, 2026. The Seared Rib Finger Bowl’s 10:00 AM launch on August 25 falls exactly at that distribution’s end time.
