An official announcement dated August 27 reveals that Matsuya will renew the “Bibim Sauce” used on the “Beef Bibimbap Bowl” and the “Beef Bowl topped with Green Onion and Soft Boiled Egg” at 10:00 a.m. on September 1, 2026. Prices remain unchanged. For the Beef Bibimbap Bowl, this is the second sauce overhaul in a little over six months, following the one in February 2026.

“Umami, Evolved.” The New Bibim Sauce and a 50-Yen-Off Coupon

The announcement’s main visual carries the headlines “Umami, Evolved.” and “Deeper Richness, Even Tastier Beef.” It lists three features of the new Bibim Sauce: “the soft mouthfeel of reduced-salt soy sauce,” “the deep richness of Sichuan doubanjiang,” and “mellow flavor with less saltiness.” A “Flavor Reconstructed NEW” badge sits in the upper right, and a bowl with red sauce drizzled over it fills the frame.

This is not the first time the Bibim Sauce on the Beef Bibimbap Bowl has been renewed. In February 2026, alongside a Matsuben Net-exclusive discount campaign, Matsuya announced “the new Bibim Sauce,” described at the time as “the aroma of smoked soy sauce and the richness of aged doubanjiang.” While the name Bibim Sauce stays the same, the flavor description is entirely different from the current wording of “reduced-salt soy sauce” and “Sichuan doubanjiang.”

To coincide with the renewal, the official Matsuya app will distribute a “50-yen-off coupon” for the Beef Bibimbap Bowl. The distribution period runs from 10:00 on Tuesday, September 1, 2026 to 10:00 on Tuesday, September 8, 2026. Applied to the regular serving at 690 yen, it comes to the equivalent of 640 yen. The Beef Bowl topped with Green Onion and Soft Boiled Egg is not eligible for the coupon.

Two Items Affected, Prices Unchanged

This renewal covers the sauce only, and the prices of the two items remain the same.

The Beef Bibimbap Bowl costs 660 yen for a Small Serving, 690 yen for a Regular Serving, and 910 yen for a Large Serving. In the Bowl category, its Regular Serving matches the Boneless Short Rib and Kimchi Bowl (Regular Serving, 690 yen) in price. One step cheaper are the Yakiniku Beef Bowl and the Salt-based Green Onion Pork Loin Bowl, at 630 yen for a Regular Serving. For the Large Serving, the Beef Bibimbap Bowl and the Boneless Short Rib and Kimchi Bowl are 910 yen, versus 850 yen for the Yakiniku Beef Bowl and the Salt-based Green Onion Pork Loin Bowl, and 980 yen for the Grilled Eel Bowl.

The Beef Bowl topped with Green Onion and Soft Boiled Egg costs 630 yen for a Small Serving, 660 yen for a Regular Serving, 830 yen for a Large Topping-Only Serving, 880 yen for a Large Serving, and 1,060 yen for an Extra-large Serving. In the Beef Bowl category, its Regular Serving price of 660 yen matches the Beef Bowl topped with Cheese. One step below sit the Bowl of Mixed Simmered Beef and Kimchi and the Beef Bowl topped with Grated Radish & Ponzu Citrus Soy Sauce (560 yen), and one step above sits the Beef Bowl topped with Tomato and Cheese (690 yen). Within the Beef Bowl lineup, where toppings build the price up from the base Beef Bowl (Regular Serving, 460 yen), it falls in the upper tier.

A Staple Polished on a Short Cycle

The “Bibim Bowl,” from which the Beef Bibimbap Bowl originates, is one of Matsuya’s staples. It debuted in June 2004, returned in 2019 after a limited-time run, and became a classic menu item in 2021. In April 2022, it came back in renewed form as the “Beef Bibimbap Bowl” and the “Pork Bibim Bowl,” and the current “Beef Bibimbap Bowl” is the name from that relaunch.

In a post on May 18, 2026, Matsuya’s official X account itself looked back while eating the Beef Bibimbap Bowl, saying, “Matsuya’s Bibim Bowl has gone through all sorts of changes.” This latest sauce overhaul, following February’s, is an extension of that accumulation.
