Matsuya Renews "Bibim Sauce" for Two Items, Including Beef Bibim Bowl, on September 1

Starting at 10:00 a.m. on September 1, 2026, Matsuya will renew “Bibim Sauce,” the sauce used in its Beef Bibim Bowl and Extra Green Onion Spicy-Savory Green Onion & Egg Beef Bowl, according to an official announcement dated August 27. Prices remain unchanged. For the Beef Bibim Bowl, this is the second sauce renewal in a little over half a year, following one in February 2026.

“Umami, Evolved.” The New Bibim Sauce and a 50-Yen-Off Coupon

The main visual in the announcement carries the headlines “Umami, Evolved.” and “Deeper Richness, Even Tastier Beef.” alongside three characteristics of the new Bibim Sauce: “the gentle mouthfeel of reduced-salt soy sauce,” “the deep richness of Sichuan doubanjiang,” and “a milder taste with less saltiness.” In the upper right corner is a “Flavor Reconstructed NEW” badge, and the photo prominently shows the bowl generously coated in the glossy red sauce.

This is not the first time the Bibim Sauce for the Beef Bibim Bowl has been renewed. In February 2026, it was also announced as “‘Bibim Sauce’ Renewed” in conjunction with a Matsuben Net-exclusive discount campaign, when it was described as having “the aroma of smoked soy sauce and the richness of aged doubanjiang.” Compared to this time’s wording of “reduced-salt soy sauce” and “Sichuan doubanjiang,” the flavor description has changed entirely while the name “Bibim Sauce” has stayed the same.

To coincide with the renewal, the official Matsuya app will distribute a “50-yen-off coupon” for the Beef Bibim Bowl. The distribution period runs from 10:00 a.m. on Tuesday, September 1, 2026, to 10:00 a.m. on Tuesday, September 8. Applied to the Regular Serving priced at 690 yen, it comes out to the equivalent of 640 yen. The Extra Green Onion Spicy-Savory Green Onion & Egg Beef Bowl is not eligible for the coupon.

Two Items Affected, Prices Unchanged

This renewal affects only the sauce; there is no change to the prices of the two items.

The Beef Bibim Bowl is priced at 660 yen for Small Serving, 690 yen for Regular Serving, and 910 yen for Large Serving. Among Regular Servings in the Bowl category, it is priced the same as the Kimchi Kalbi Bowl (690 yen). A step below are the Yakiniku Beef Bowl and Salt-based Green Onion Pork Loin Bowl, both 630 yen for Regular Serving; for Large Serving, the Yakiniku Beef Bowl and Salt-based Green Onion Pork Loin Bowl come in at 850 yen and the Grilled Eel Bowl at 980 yen, compared to 910 yen for the Beef Bibim Bowl and Kimchi Kalbi Bowl.

The Extra Green Onion Spicy-Savory Green Onion & Egg Beef Bowl is priced at 630 yen for Small Serving, 660 yen for Regular Serving, 830 yen for Large Topping-Only Serving, 880 yen for Large Serving, and 1,060 yen for Extra-large Serving. Its Regular Serving price of 660 yen in the Beef Bowl category matches the Cheese Beef Bowl, with the Kimchi Beef Bowl and Oni-oroshi Grated Radish Ponzu Citrus Soy Sauce Beef Bowl (560 yen) a step below and the Umatoma Cheese Beef Bowl (690 yen) a step above. Built on the base Beef Bowl (460 yen for Regular Serving), with prices rising through toppings, it sits in the upper price tier of the Beef Bowl lineup.

A Staple Refined on a Short Cycle

The Bibim Bowl, the predecessor of today’s Beef Bibim Bowl, debuted in June 2004 as one of Matsuya’s staples. After a stretch as a limited-time item, it returned in 2019 and was made a permanent menu item in 2021. In April 2022, it was relaunched under the renewed names “Beef Bibim Bowl” and “Pork Bibim Bowl,” and the current “Beef Bibim Bowl” is the product name from that relaunch.

In a post on May 18, 2026, Matsuya’s official X account, while eating the Beef Bibim Bowl, looked back on its own history, noting, “Matsuya’s Bibim Bowl has gone through various changes over the years.” This latest sauce renewal, following the one in February, is a continuation of that accumulation of changes.
