On the morning of June 2, 2026, six items in the ‘Overflowing Three-Kind Rich Cheese-Filled Hamburg Steak’ series were newly added to the menu on Matsuya’s official website. They go on sale today at 10 AM. At the same time, the existing Umatoma and Demi-glace Egg Hamburg Steak set meals were reorganized into a four-size lineup of Only, Single, Regular and Triple, and five items, including the Hamburg Steak with Demi-glace Sauce Set Meal and the Hamburg Steak with Demi-glace Sauce and Omelet Set Meal, were removed from the official menu. The cheapest is the Demi-glace at 1,090 yen and the most expensive is the Demi-glace Egg Cheese at 1,390 yen, a price range of 300 yen. Protein climbs from 33.7g for the Demi-glace to 47.6g for the Demi-glace Egg Cheese, and the extra cheese also raises the salt equivalent from 6.2g to 7.3g. Fat ranges from 48.0g for the Demi-glace to 68.0g for the Demi-glace Egg Cheese, with the combination of extra cheese and omelet setting the upper limit.

The May 28 official Matsuya announcement described a lineup of 12 variations: 6 set meals and 6 rice sets. As of 9:30 AM on June 2, however, only the 6 set meals have appeared on the menu, and two of them, the Umatoma and the Demi-glace Egg, also have a miso soup-included only version (980 yen and 990 yen). The rice set versions have not yet appeared as standalone items.

Alongside the launch of the ‘Overflowing Three-Kind Rich Cheese-Filled Hamburg Steak’, the existing Umatoma Hamburg Steak Set Meal, Cheese Umatoma Hamburg Steak Set Meal and Demi-glace Egg Hamburg Steak Set Meal returned in refreshed form, and a new “Cheese Demi-glace Egg Hamburg Steak Set Meal” was added. All four items use a four-size lineup of Only, Single, Regular and Triple.

Compared with before the overhaul, the Regular size (the set meal with miso soup and salad) rises from 980 yen to 1,180 yen (+200 yen) for the Umatoma, from 1,180 yen to 1,380 yen (+200 yen) for the Cheese Umatoma, and from 1,080 yen to 1,240 yen (+160 yen) for the Demi-glace Egg. The Only size, by contrast, falls from 780 yen to 630 yen (-150 yen) for the Umatoma, from 980 yen to 830 yen (-150 yen) for the Cheese Umatoma, and from 880 yen to 690 yen (-190 yen) for the Demi-glace Egg. The price gap between sizes has widened considerably. Regular-size calories also all jump at once: the Umatoma goes from 986 kcal to 1,226 kcal (+240 kcal), the Cheese Umatoma from 1,145 kcal to 1,385 kcal (+240 kcal), and the Demi-glace Egg from 1,043 kcal to 1,290 kcal (+247 kcal). This reads as a size-expansion renewal with a larger patty portion in the set meal base.

Five Demi-glace and Omelet Demi-glace Items Removed, Naming Convention Tidied

The three lines Demi-glace, Omelet Demi-glace and Cheese Omelet Demi-glace were renamed Demi-glace, Demi-glace Egg and Demi-glace Egg Cheese, so that the topping makeup (omelet = “Egg,” extra cheese = “Cheese”) can be read from the product name. Prices rise modestly by 10 to 100 yen, so the set meal price range is largely maintained while “Three-Kind Rich Cheese-Filled” becomes the standard spec.

The Half-and-Half Beef Umatoma Hamburg Steak Set Meal and the Umatoma Hamburg Steak Founding Beef Curry have no direct successors, meaning the hybrid compositions of “Half-and-Half Beef” and “Umatoma + Beef Curry” have both dropped out of the Hamburg Steak lineup at the same time.

Hamburg Steak Founding Beef Curry Continues at a Reduced 990 Yen

In the curry category, the Hamburg Steak Founding Beef Curry continues, with its price falling 160 yen from the previous 1,150 yen to 990 yen. Nutrition figures fall across the board: calories from 1,145 kcal to 1,066 kcal (-79 kcal), protein from 37.3g to 30.9g (-6.4g), fat from 54.1g to 50.7g (-3.4g), carbohydrates from 117.1g to 112.3g (-4.8g) and salt equivalent from 6.8g to 6.1g (-0.7g), suggesting the content itself has been made lighter. Because the “Umatoma Hamburg Steak Founding Beef Curry” (1,280 yen, 1,284 kcal) in the same category is being removed this time, the Hamburg Steak items in the curry category are now consolidated into this one item.

In the menu update at 11:01 AM today, the product image for the Hamburg Steak Founding Beef Curry was also swapped for a new version. The image replacement came about an hour and a half after the price and nutrition reductions that were reflected first at 9:30 AM this morning, so the refresh of the price and nutrition display and the refresh of the product image are proceeding in stages.
