On Wednesday, September 9, 2026 at 11:00, Matsuya Foods began selling the “Kobe Beef Bibimbap Bowl” (1,800 yen, tax included) at Matsuya PREMIUM Ginza, its prepared-meal format store. The dish combines Kobe beef with a special spicy “bibim sauce” and is topped with house-made kimchi and a soft-boiled “Maximum Koitamago” egg. Shareholder benefit vouchers cannot be used for it.

According to the announcement, the Kobe beef, known for the refined sweetness of its fat, is paired with a special bibim sauce that is not merely spicy but also brings out the umami of the beef. House-made kimchi and Maximum Koitamago are added on top, building a dish in which the sweetness of the Kobe beef fat, the kick of the bibim sauce and house-made kimchi, and the richness of the soft-boiled egg come together.

The dish is presented in a round wooden container, with thin slices of Kobe beef laid out, a soft-boiled egg in the center, and finely chopped scallions, kimchi, and shredded nori arranged around it, finished with a reddish sauce poured over. The promotional image carries the tagline “Fragrant Aroma, Blissful Tenderness. A Bowl of Kobe Beef.” along with an emblem reading “Matsubikai Commemorative Product.”

The Fourth Kobe Beef Item, Priced at 1,800 Yen

Matsuya PREMIUM Ginza has kept rolling out Kobe beef bowl and rice dishes. Starting with the “Kobe Beef Bowl” (1,390 yen) at opening, it followed with the “Kobe Beef Bowl topped with Green Onion and Soft Boiled Egg” (1,650 yen) on August 19 and the “Kobe Beef Bowl topped with Grated Radish & Ponzu Citrus Soy Sauce” (1,650 yen) on September 2. This “Kobe Beef Bibimbap Bowl” is priced at 1,800 yen, higher than all three earlier items.

All three earlier items came with a “Double-Meat” option that doubles the amount of meat for an additional 690 yen. This announcement, however, makes no mention of a double-meat option, and only a single 1,800 yen version is listed. Note also that the regular Matsuya menu has no item bearing the Bibimbap name, making this a dish unique to Matsuya PREMIUM Ginza.

New Kobe Beef Items: Release Interval Shrinks from Two Weeks to One Week

The pace at which new Kobe beef–focused menu items appear is accelerating. From the June 10 opening to the first spin-off item, the “Kobe Beef Bowl topped with Green Onion and Soft Boiled Egg” (August 19), about two and a half months passed. After that, the gap to the “Kobe Beef Bowl topped with Grated Radish & Ponzu Citrus Soy Sauce” was 14 days, and the gap to this Bibimbap Bowl shrank further to 7 days. The three most recent release dates (August 19, September 2, and September 9) all fell on Wednesdays, and all at 11:00.

The timing of the announcements also differs. The announcements for the August 19 and September 2 releases were both published the day before release, but this one was announced on the release day itself, September 9. Also, while the September 2 announcement for the Grated Radish & Ponzu Beef Bowl touted “a new menu item from the Kobe Beef Bowl series,” this announcement contains neither the word “series” nor “beef bowl,” and the product is simply named “Bibimbap Bowl.”
