OfficialNews

Matsuya Foods began selling the “Kobe Beef Bibimbap Bowl” (1,800 yen, tax included) at 11:00 a.m. on Wednesday, September 9, 2026, at its prepared-meal retail format outlet Matsuya PREMIUM Ginza Store. The dish pairs Kobe beef with a special spicy “Bibim Sauce” and is topped with house-made Kimchi and a soft-boiled “Maximum Koitamago.” Shareholder benefit vouchers cannot be used for this item.

A Dish Layering Kobe Beef with Bibim Sauce, Kimchi, and a Soft-boiled Egg

According to the announcement, Kobe beef—known for the refined sweetness of its fat—is paired with a special Bibim Sauce that not only adds spiciness but also brings out the umami of the beef. House-made Kimchi and Maximum Koitamago are then added, layering the sweetness of the Kobe beef’s fat, the kick of the Bibim Sauce and house-made Kimchi, and the richness of the soft-boiled egg.

The dish is presented in a round wooden bowl lined with thinly sliced Kobe beef, with a soft-boiled egg at the center surrounded by finely chopped Scallion, Kimchi, and shredded Nori, all topped with a reddish sauce. The promotional image is accompanied by the copy “Fragrant Aroma, Blissful Tenderness. A Bowl of Kobe Beef.” and an emblem reading “Matsubikai Commemorative Product.”

Fourth Kobe Beef-Branded Item, Priced at 1,800 Yen

Matsuya PREMIUM Ginza Store has been rolling out a series of bowl and rice dishes featuring Kobe beef. Starting with the “Kobe Beef Bowl” (1,390 yen) at opening, the lineup expanded to the “Kobe Beef Green Onion & Egg Bowl” (1,650 yen) on August 19 and the “Kobe Beef Oni-oroshi Grated Radish Ponzu Citrus Soy Sauce Bowl” (1,650 yen) on September 2. The latest addition, the “Kobe Beef Bibimbap Bowl,” is priced at 1,800 yen, higher than the previous three items.

Menu Item Release Price Double-Meat
Kobe Beef Bowl Opening 1,390 yen 2,080 yen
Kobe Beef Green Onion & Egg Bowl August 19 1,650 yen 2,340 yen
Kobe Beef Oni-oroshi Grated Radish Ponzu Citrus Soy Sauce Bowl September 2 1,650 yen 2,340 yen
Kobe Beef Bibimbap Bowl September 9 1,800 yen Not Offered

All three previous items offered a “Double-Meat” option with double the beef for an additional 690 yen, but this announcement makes no mention of a Double-Meat option, listing only the single 1,800 yen version. Notably, no regular Matsuya menu carries a Bibimbap-branded item, making this dish exclusive to Matsuya PREMIUM Ginza Store.

New Kobe Beef Menu Items Now Arriving Weekly, Down from Every Two Weeks

The pace of new Kobe beef-based menu items has been accelerating. About two and a half months passed between the June 10 opening and the first derivative item, the “Kobe Beef Green Onion & Egg Bowl” (August 19), but the interval then shortened to 14 days before the “Kobe Beef Oni-oroshi Grated Radish Ponzu Citrus Soy Sauce Bowl,” and to just 7 days before this latest Bibimbap Bowl. The last three release dates (August 19, September 2, and September 9) have all fallen on a Wednesday, and all launched at 11:00 a.m.

The timing of the announcements has also differed. The August 19 and September 2 releases were both announced the day before their launch, but this time the announcement came on the launch day itself, September 9. Additionally, while the September 2 announcement for the Oni-oroshi Grated Radish Ponzu Citrus Soy Sauce Bowl described it as “a new menu item from the Kobe Beef Bowl series,” this announcement contains neither the word “series” nor “Bowl,” and the product is instead named “Bibimbap Bowl.”

Editor's Note

The Ginza store keeps adding Kobe beef menu items at what feels like a weekly pace. We're curious what's coming next.
