Matsuya Renews Sauce for 'Beef Bibim Bowl' and Another Item, Cutting Salt Content by Up to 0.7g Across All 8 Sizes

MenuUpdated

To coincide with Matsuya’s renewal of the “Beef Bibim Bowl sauce” at 10:00 a.m. on September 1, 2026, the nutritional information on the official site was updated for two items — Beef Bibim Bowl and Extra Green Onion Spicy-Savory Green Onion & Egg Beef Bowl — across all 8 sizes combined. Salt content fell for every size, while calories and carbohydrates moved slightly upward across the board. Prices remain unchanged for all of them.

Behind the Update: A Renewed “Bibim Sauce”

In an announcement dated August 27, 2026, titled “Umami, Evolved. The sauce for Beef Bibim Bowl is getting even tastier!”, Matsuya had already flagged the sauce switch for 10:00 a.m. on September 1. The new sauce was named “Bibim Sauce,” and the announcement named two items as its target: Beef Bibim Bowl and Extra Green Onion Spicy-Savory Green Onion & Egg Beef Bowl. The announcement text described it as having “the gentle taste of Reduced-Salt Soy Sauce paired with the deep richness of Sichuan Doubanjiang” and being “toned down in saltiness for a milder finish” — a description that lines up with what the nutritional data now shows, namely that salt content dropped across every size. The same announcement was reposted on the official X account (@matsuya_foods) at 6:00 p.m. on August 28, 2026, with the caption “Please enjoy our new, richer, more evolved sauce ✨.”

Alongside the sauce overhaul, calories, protein, fat, and carbohydrates each show small increases depending on size — roughly 0.1 to 4kcal or around 0.1g. This appears to reflect a swap in the seasoning makeup even as saltiness was dialed back.

For the headline item, Beef Bibim Bowl, salt content fell by 0.7g across Small Serving, Regular Serving, and Large Serving alike. Calories rose by 3 to 4kcal and carbohydrates by 0.5 to 0.6g — both very small shifts.

Prices Unchanged, Category Positioning Stays the Same

This update touches only the nutritional information — prices are unchanged. Beef Bibim Bowl remains 690 yen for a Regular Serving, putting it in the same price bracket as Kimchi Kalbi Bowl (690 yen for Regular Serving) within the bowl category, and still 60 yen above Salt-based Green Onion Pork Loin Bowl (630 yen for Regular Serving) in a mid-tier position. Extra Green Onion Spicy-Savory Green Onion & Egg Beef Bowl remains 660 yen for a Regular Serving, the same price as Cheese Beef Bowl (660 yen for Regular Serving) — 200 yen above the standard Beef Bowl (460 yen for Regular Serving) and 100 yen above Kimchi Beef Bowl (560 yen for Regular Serving), placing it in the upper tier of the Beef Bowl lineup. Both items are offered only in different sizes, with no set meal or rice set options.

A 50-Yen-Off Coupon for Beef Bibim Bowl Is Also Running

To coincide with the sauce renewal, the official Matsuya app is distributing a “Beef Bibim Bowl 50-Yen-Off Coupon,” valid from 10:00 a.m. on September 1, 2026, through 10:00 a.m. on September 8, 2026. It was announced in the same notice as the sauce switch, positioned as an incentive to try the renewed Beef Bibim Bowl.

Editor's Note

A quiet cut to salt, calories left almost untouched. Even with a new sauce, the "usual Bibim Bowl" keeps its familiar face — a modest but solid adjustment.
